  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, sliced (red, green, yellow)
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips (optional for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the shredded chicken, sliced bell peppers, and sliced onion in a large mixing bowl.
  3. Add the black beans and corn to the bowl.
  4. Mix in the salsa along with the cumin, chili powder, salt, and pepper.
  5. Pour the mixture into a greased casserole dish and spread it out evenly.
  6. Top the casserole with shredded cheese.
  7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Optionally, sprinkle crushed tortilla chips on top for the last five minutes of baking.
