Chicken Marsala

A classic Italian dish featuring tender chicken cutlets in a rich Marsala wine and mushroom sauce.

  • 4 chicken cutlets
  • 1 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1/2 cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. Begin by seasoning the flour with salt and pepper in a shallow dish.
  2. Take each chicken cutlet and dredge it in the seasoned flour, shaking off any excess.
  3. Heat olive oil and butter over medium-high heat in a large skillet.
  4. Add the chicken cutlets to the skillet and cook for about 4-5 minutes on each side or until golden brown.
  5. Remove the cooked chicken from the skillet and set aside.
  6. Sauté the sliced mushrooms in the same skillet until browned and tender.
  7. Pour in the Marsala wine and scrape up any bits stuck to the bottom of the pan.
  8. Allow the wine to simmer for a few minutes until it reduces slightly.
  9. Stir in the heavy cream to create a smooth sauce.
  10. Return the cooked chicken to the pan and let it simmer for another 5 minutes.
  11. Plate the chicken and pour the mushroom Marsala sauce over the top; garnish with fresh parsley.

Notes

Serve with sides like pasta, mashed potatoes, or crusty bread to soak up the sauce.
