Chicken Piccata

A classic Italian dish featuring tender chicken breasts in a zesty lemon and caper sauce, perfect for impressing guests or a quick weeknight meal.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers, rinsed
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper, then dredge in flour, shaking off excess.
  2. Heat the skillet: In a large skillet, heat butter and olive oil over medium-high heat until bubbling.
  3. Cook the chicken: Add chicken breasts to the skillet and cook for 3-4 minutes on each side until golden brown and cooked through.
  4. Make the sauce: Add lemon juice, chicken broth, and rinsed capers to the same skillet and bring to a gentle simmer, scraping up browned bits.
  5. Finish cooking the chicken: Return the chicken to the skillet and cook for an additional 2 minutes in the sauce.
  6. Garnish and serve: Remove from heat, garnish with chopped parsley, and serve with sauce.

Notes

Serve with pasta, rice, or a green salad. Leftovers can be stored in an airtight container for up to 3 days.
