A quick and easy chicken stir-fry packed with lean protein and fresh vegetables, perfect for busy weekdays.

  • 2 chicken breasts, sliced
  • 2 cups mixed vegetables (like bell peppers, broccoli, and carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • Cooked rice, for serving

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the minced ginger and garlic, stir-frying for about 30 seconds until fragrant.
  3. Cook the sliced chicken breasts, stirring frequently, until golden brown and fully cooked, about 5-7 minutes.
  4. Mix in the mixed vegetables and stir-fry for an additional 3-4 minutes until tender-crisp.
  5. Add the soy sauce and oyster sauce, stirring to combine.
  6. Serve the chicken stir-fry hot over cooked rice.

Notes

You can use different vegetables or proteins like beef, shrimp, or tofu. Experiment with sauces and additions like nuts for extra crunch.
