Chickpea Salad Sandwich

  • 1/4 cup vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Whole grain bread or sandwich rolls
  • Lettuce (optional)

Instructions

  1. Prepare the chickpeas: Start by opening the can of chickpeas. Drain and rinse them well under cold water. In a large bowl, use a fork or potato masher to mash the chickpeas until you reach your desired consistency.
  2. Mix the ingredients: Add in the vegan mayonnaise, Dijon mustard, and lemon juice. Then, mix in the diced celery and diced red onion. Stir everything together until well combined.
  3. Season the salad: Taste the mixture and season with salt and pepper to your liking.
  4. Assemble the sandwich: Spoon the chickpea salad onto one slice of whole grain bread. If desired, add fresh lettuce on top. Place another slice of bread on top to complete your sandwich.
  5. Serve: Cut the sandwich in half and enjoy!
