Chinese Curry Chicken

A delightful and flavorful dish combining chicken, vegetables, and aromatic curry for a quick and easy meal.

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 2 tablespoons curry powder
  • 1 can coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat the oil: Begin by heating 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Cook the chicken: Once the oil is hot, add the chicken pieces to the skillet. Cook for about 5-7 minutes until browned on all sides.
  3. Add the vegetables: After the chicken is browned, add the bell peppers, broccoli, and carrots to the skillet. Sauté for an additional 5 minutes.
  4. Incorporate curry powder: Sprinkle in the curry powder and cook for about 1 minute until fragrant.
  5. Pour in coconut milk and soy sauce: Add the coconut milk and soy sauce and stir gently. Let it come to a simmer.
  6. Season and thicken: Season with salt and pepper and cook for another 5-10 minutes until the sauce thickens.
  7. Serve: Serve the Chinese Curry Chicken over a bed of warm, cooked rice.
