  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup diced fresh vegetables (bell peppers, onions, or tomatoes)
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat Grill: Start by preheating your grill to medium-high heat.
  2. Prepare Spice Mixture: In a bowl, mix together olive oil, smoked paprika, cumin, garlic powder, and a sprinkle of salt and pepper.
  3. Coat Chicken: Coat the chicken breasts with the spice mixture.
  4. Grill the Chicken: Place the chicken on the grill and grill for 6 to 7 minutes on each side until cooked through.
  5. Let Chicken Rest: Remove the chicken from the grill and let it rest for a few minutes.
  6. Slice Chicken: Slice the grilled chicken into strips.
  7. Assemble the Burritos: On each tortilla, layer rice, black beans, chicken, vegetables, and drizzle with chipotle ranch dressing.
  8. Roll the Burrito: Roll the tortilla tightly to enclose the filling.
  9. Serve: Serve the burritos immediately garnished with cilantro if desired.
