Instructions

  • 1. Place chopped chocolate in a heatproof bowl.
  • 2. Heat heavy cream and butter in a small saucepan until just simmering.
  • 3. Pour hot cream mixture over chocolate and let sit for 2 minutes.
  • 4. Stir until smooth and glossy.
  • 5. Mix in raspberry preserves, vanilla extract, and salt.
  • 6. Cover and refrigerate for 2–3 hours until firm.
