Chocolate Three Milk Cake

A delightful twist on the traditional Tres Leches cake, featuring rich chocolate flavor and a creamy milky texture.

  • 1 cup all-purpose flour (125g)
  • ½ cup natural unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon table salt
  • 1 cup granulated sugar (divided, 200g)
  • 5 large eggs (separated)
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (12-ounce) can evaporated milk
  • ½ cup whole milk
  • 2 Tablespoons natural unsweetened cocoa powder
  • 2 cups heavy whipping cream
  • ½ cup granulated sugar
  • 3 Tablespoons natural unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 4 ounces shaved semisweet chocolate (for topping)

Instructions

  1. Preheat the oven by heating to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish with baking spray.
  3. Separate the yolks from the whites of the 5 large eggs.
  4. Mix together ¾ cup of granulated sugar with the egg yolks until creamy.
  5. Add ½ cup of whole milk and 1 teaspoon of vanilla extract to the mixture.
  6. Combine in a separate bowl the flour, cocoa powder, baking powder, baking soda, and salt, then add to the egg yolk mixture.
  7. Whip the egg whites, gradually adding the remaining ¼ cup of sugar, until stiff peaks form.
  8. Fold the whipped egg whites into the cake batter gently.
  9. Bake the batter in the prepared dish for 25-30 minutes.
  10. Cool the cake completely, then poke holes in it using a fork.
  11. Prepare the three-milk mixture by whisking together sweetened condensed milk, evaporated milk, and ½ cup of whole milk with cocoa powder.
  12. Soak the cooled cake with the milk mixture and refrigerate for at least 3 hours or overnight.
  13. Whip the cream with ½ cup of sugar, cocoa powder, and vanilla extract until stiff peaks form.
  14. Spread the whipped cream over the top of the soaked cake and sprinkle with shaved chocolate.
  15. Serve chilled and enjoy!
