Cilantro Lime Pasta Salad

A refreshing and vibrant pasta salad with cilantro, lime, and fresh vegetables, ideal for picnics or meal prep.

Ingredients

  • Pasta (your choice)
  • Chickpeas
  • Cucumber
  • Corn
  • Greek yogurt
  • Cilantro
  • Lime juice
  • Avocado
  • Salt
  • Pepper

Instructions

  1. Cook the pasta according to the package instructions. Use a large pot of salted boiling water. Drain and cool.
  2. Prepare the veggies by combining chickpeas, diced cucumber, and corn in a bowl.
  3. Make the dressing by mixing Greek yogurt, chopped cilantro, lime juice, and diced avocado until smooth.
  4. Combine the cooked pasta with the veggie mixture.
  5. Dress the salad by pouring the dressing over the pasta and tossing gently.
  6. Season your salad with salt and pepper to taste.
  7. Serve immediately or store in the refrigerator for later.

Notes
