Classic Spicy Moroccan Fish in Rich Sauce

An exciting dish that brings the vibrant flavors of Morocco into your kitchen, featuring tender fish in a rich, spicy sauce.

  • 1 pound salmon fillets
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced into strips
  • 1 serrano pepper, sliced into strips
  • ½ cup chopped cilantro
  • 2 carrots, peeled and cut into strips
  • 1 russet potato, peeled and cut into 1” slices (optional)
  • 6 garlic cloves, peeled and halved
  • 1 tablespoon tomato paste
  • ¾ to 1 cup water
  • 1 tablespoon sweet paprika
  • ½ tablespoon hot paprika (adjust to taste)
  • 1 teaspoon coarse salt
  • ½ teaspoon cumin
  • ¼ teaspoon turmeric

Instructions

  1. Heat a large sauté pan over medium heat.
  2. Add the olive oil to coat the bottom of the pan.
  3. Add the sliced red bell pepper, serrano pepper, carrots, and russet potato (if using) to the pan. Sauté for about 2-3 minutes.
  4. Sprinkle in the sweet paprika, hot paprika, coarse salt, cumin, turmeric, and tomato paste. Stir and cook for an additional 2-3 minutes.
  5. Add half of the chopped cilantro and around ¾ cup of water to the pan. Stir and cover, cooking for 12-15 minutes.
  6. Taste the sauce and adjust salt and spice levels as needed.
  7. Season the salmon fillets lightly with salt and place them into the pan, ensuring they are covered by the sauce.
  8. Spoon sauce over each fillet and top with remaining chopped cilantro. Cover and cook on low flame for about 20-25 minutes.
  9. Just before serving, add fresh lemon slices on top of the fish.

Notes

For added flavor, consider marinating the fish in spices for about 30 minutes before cooking.
