  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • Lemon curd (for topping)
  • Cream cheese frosting (for topping)
  • Almond flavoring (optional, for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the all-purpose flour, baking soda, baking powder, and salt in a bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the egg, lemon zest, lemon juice, and vanilla extract to the creamed mixture.
  5. Combine the flour mixture gradually into the wet ingredients until just mixed.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until the edges are lightly golden.
  8. Cool cookies on the baking sheet for about 5 minutes before transferring to a wire rack.
  9. Add a layer of lemon curd and a swirl of cream cheese frosting on each cookie.
  10. Optional: Add almond flavoring to the cream cheese frosting if desired.
