Copycat Nothing Bundt Red Velvet Cake

  • 3/4 cup sour cream (at room temperature)
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1/4 cup mayonnaise
  • 3 large eggs (at room temperature)
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 8 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the sour cream, vegetable oil, water, mayonnaise, and eggs until smooth.
  3. Add the red velvet cake mix slowly, stirring until just combined.
  4. Incorporate the semi-sweet chocolate chips.
  5. Prepare the bundt pan by greasing it thoroughly.
  6. Pour the batter into the prepared bundt pan.
  7. Bake for about 35-40 minutes, until a toothpick comes out clean.
  8. Cool the cake in the pan for 10 minutes, then invert onto a wire rack.
  9. Mix the cream cheese and butter until fluffy.
  10. Add the powdered sugar gradually, mixing until smooth.
  11. Incorporate the vanilla extract.
  12. Frost the cooled cake with the cream cheese frosting.
