Cranberry Custard Pie

A delightful dessert combining the tangy flavor of cranberries with creamy custard, perfect for the holiday season.

  • 1 pre-made pie crust (9-inch)
  • 2 cups fresh or frozen cranberries
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch or flour
  • Extra sugar for sprinkling on top (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pie crust by placing it into a pie dish.
  3. Wash fresh cranberries thoroughly or set aside frozen ones.
  4. Combine cranberries and 1/2 cup of sugar in a bowl and let sit for 10-15 minutes.
  5. Whisk together eggs, remaining sugar, heavy cream, vanilla, cinnamon, salt, and cornstarch in a large bowl until smooth.
  6. Fold in the sugared cranberries into the custard mixture.
  7. Pour the filling into the prepared pie crust evenly.
  8. Bake for 45-55 minutes until the custard is set and a knife inserted comes out clean.
  9. Cool at room temperature before refrigerating for at least 2 hours.
  10. Serve chilled or at room temperature with a sprinkle of sugar and cranberries on top.

Notes

Use fresh cranberries for the best flavor, and feel free to experiment with different fruits.
