Creamy Lemon Chicken Orzo Soup

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1/2 cup capers, fried
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced chicken and cook until browned, about 5 to 7 minutes.
  2. Add the chopped onion and minced garlic. Cook until the onion softens, about 3-5 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the orzo pasta and cook according to package instructions, about 8-10 minutes.
  5. Lower the heat and add the heavy cream and lemon juice. Mix well and season with salt and pepper.
  6. Serve hot, garnished with fried capers and parsley.

Notes

For a richer flavor, add fresh herbs like thyme or dill. Customize the soup by adding vegetables such as carrots or spinach.
