  • 2 chicken breasts, diced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Italian seasoning to taste

Instructions

  1. Cook the Pasta: Start by boiling a pot of water. Add your pasta to the boiling water and cook according to the package instructions. Once done, drain the pasta and set it aside.
  2. Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add in the diced chicken. Season the chicken with a pinch of salt and pepper. Cook the chicken for about 6-7 minutes or until golden brown.
  3. Add Garlic: Once the chicken is cooked, add the minced garlic to the skillet. Cook for about 1 minute until fragrant.
  4. Add Vegetables: Toss in the halved cherry tomatoes and spinach, stirring together for about 2-3 minutes until the spinach wilts and tomatoes soften.
  5. Make it Creamy: Pour in the heavy cream, stirring to combine and bring to a simmer.
  6. Add Cheese: Stir in the grated Parmesan cheese until melted and the sauce is smooth.
  7. Combine with Pasta: Add the cooked pasta to the skillet and toss to coat evenly with the sauce.
  8. Season: Taste and adjust with salt, pepper, and Italian seasoning.
  9. Serve: Serve warm, garnished with extra Parmesan or Italian seasoning if desired.
