- 4 salmon fillets
- 1 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup fresh spinach
- Fresh parsley for garnish
- 1. Season salmon fillets with salt and pepper.
- 2. Heat olive oil in a large skillet over medium-high heat.
- 3. Sear salmon for 4–5 minutes per side until golden and cooked through; remove and set aside.
- 4. In the same skillet, melt butter and sauté garlic until fragrant.
- 5. Stir in sun-dried tomatoes and cook for 1 minute.
- 6. Add heavy cream, chicken broth, Parmesan, and Italian seasoning; simmer until slightly thickened.
- 7. Stir in fresh spinach and cook until wilted.
- 8. Return salmon to the skillet and spoon sauce over the top.

- 10. Garnish with parsley and serve.
