Creamy Tuscan Salmon

  • 4 salmon fillets
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup fresh spinach
  • Fresh parsley for garnish

Instructions

  • 1. Season salmon fillets with salt and pepper.
  • 2. Heat olive oil in a large skillet over medium-high heat.
  • 3. Sear salmon for 4–5 minutes per side until golden and cooked through; remove and set aside.
  • 4. In the same skillet, melt butter and sauté garlic until fragrant.
  • 5. Stir in sun-dried tomatoes and cook for 1 minute.
  • 6. Add heavy cream, chicken broth, Parmesan, and Italian seasoning; simmer until slightly thickened.
  • 7. Stir in fresh spinach and cook until wilted.
  • 8. Return salmon to the skillet and spoon sauce over the top.
  • 9. Simmer for 2–3 minutes until heated through.
  • 10. Garnish with parsley and serve.

Notes

  • Serve over pasta, rice, or mashed potatoes.
  • Use half-and-half for a lighter sauce.
  • Store leftovers in the refrigerator for up to 2 days.
