  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1 1/2 teaspoons fine sea salt, divided
  • 1 teaspoon black pepper, divided
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 cup plain panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Cajun seasoning or Italian seasoning
  • 1 teaspoon paprika
  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon butter

Instructions

  1. Prepare the Chicken Breasts: Fillet each chicken breast into two thinner cutlets. Pound to ensure even thickness.
  2. Season the Chicken: Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon black pepper.
  3. Set Up Breading Stations: Arrange three plates for flour, egg, and panko mixtures.
  4. Prepare the Egg Mixture: In a dish, crack egg and add 1 teaspoon of water. Beat together.
  5. Prepare the Panko Mixture: In another dish, combine panko, parmesan, 1/2 teaspoon salt, Cajun or Italian seasoning, and paprika.
  6. Bread the Chicken: Coat each breast in flour, then egg, and finally panko, pressing breadcrumbs onto chicken.
  7. Cook the Chicken: In a skillet over medium heat, add olive oil and butter. Cook chicken for 3-4 minutes per side.
  8. Check for Doneness: Ensure internal temperature reaches 165°F.
  9. Rest the Chicken: Let chicken rest on a wire rack.
