Easy Couscous Salad

A refreshing and simple couscous salad combined with fresh vegetables, perfect for any occasion.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups water or vegetable broth
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the couscous by bringing water or vegetable broth to a boil in a medium saucepan, then adding couscous and letting it sit to absorb the liquid.
  2. Fluff the couscous with a fork after five minutes.
  3. Combine the fluffed couscous with diced cucumbers, bell peppers, cherry tomatoes, red onion, and parsley in a large mixing bowl.
  4. Make the dressing by whisking olive oil and lemon juice in a small bowl, seasoning with salt and pepper.
  5. Dress the salad by pouring the dressing over the couscous mixture and tossing everything together.
  6. Serve immediately or refrigerate for later, tossing again before serving.

Notes

This salad can be customized with additional ingredients like chickpeas or feta cheese and can be served chilled or at room temperature.
