Fresh Salmon with Mango Salsa

  • 1 ripe mango, diced
  • 1 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño, minced (adjust based on spice preference)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare the Salmon Fillets: Begin by preheating your grill or skillet over medium heat. While it heats up, brush both sides of the salmon fillets with olive oil and season well with salt and pepper.
  2. Cook the Salmon: Place the salmon fillets on the hot grill or skillet. Cook for about 4-5 minutes on one side without moving them. Then, carefully flip and cook for an additional 4-5 minutes, or until the internal temperature reaches at least 145°F (63°C).
  3. Prepare the Mango Salsa: In a medium bowl, combine the diced mango, red onion, bell pepper, jalapeño, lime juice, salt, and pepper. Mix well and adjust seasoning to taste.
  4. Serve and Enjoy: Plate the grilled salmon fillets and top each with a generous amount of mango salsa. Serve warm or at room temperature.

Notes

For added flavor, consider marinating the salmon in lime juice and olive oil before grilling.
