Instructions

  1. Prepare your ingredients: Let cream cheese sit at room temperature for easy mixing. Measure out sugar, vanilla extract, and heavy cream; have graham cracker crumbs ready.
  2. Mix the base: Beat softened cream cheese in a mixing bowl until smooth. Gradually add sugar and vanilla, beating until creamy.
  3. Incorporate the heavy cream: Pour in the heavy cream and whip until fluffy on medium speed.
  4. Scoop the mixture into balls using a cookie scoop or hands, aiming for 1-2 inches in diameter.
  5. Insert popsicle sticks into the center of each ball, ensuring they’re securely held.
  6. Freeze the pops on a parchment-lined baking sheet until firm, ideally overnight.
  7. Coat the pops in graham cracker crumbs, ensuring they are fully covered.
