  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg
  • 1 cup orzo pasta
  • 1 lemon (zested and juiced)
  • 2 cups chicken broth
  • Olive oil for cooking

Instructions

  1. Prepare the meatball mixture by mixing together ground chicken, breadcrumbs, feta cheese, parsley, garlic, oregano, salt, black pepper, and egg in a large bowl.
  2. Shape the mixture into small, uniform meatballs.
  3. Cook the meatballs in a skillet over medium heat with olive oil until golden brown and cooked through, about 10-12 minutes.
  4. Prepare the orzo by bringing chicken broth to a boil and cooking the orzo until al dente, according to package instructions.
  5. Drain the orzo and return it to the saucepan, stirring in lemon juice and lemon zest for flavor.
  6. Serve by placing lemon orzo on each plate and topping it with cooked meatballs. Garnish with additional parsley or lemon slices if desired.

Notes

Adjust seasonings to taste and consider adding tzatziki sauce for serving.
