Delicious Greek Chicken Skewers made with tender chicken cubes marinated in a zesty mix of olive oil, lemon juice, garlic, and oregano, perfect for grilling.

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 2 pounds chicken breast, cut into cubes

Instructions

  1. Prepare the Marinade: Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl and whisk until blended.
  2. Marinate the Chicken: Add cubed chicken to the marinade, tossing to coat well. Allow to marinate.
  3. Refrigerate: Cover and refrigerate for at least 30 minutes, preferably longer.
  4. Preheat the Grill or Oven: Set your grill to medium heat or preheat the oven to 400°F (200°C).
  5. Prepare the Skewers: Soak wooden skewers in water for 30 minutes and thread chicken onto skewers.
  6. Cook the Chicken Skewers: Grill for 10-15 minutes or roast in the oven for 20-25 minutes until cooked through.
  7. Serve hot with pita and toppings like tzatziki, cucumbers, or tomatoes.

Notes

Marinate overnight for best flavor. You can add vegetables to the skewers for a colorful addition.
