  • 1 cup diced chicken breast
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Cook the diced chicken in the hot oil, stirring frequently until cooked through, about 5-7 minutes.
  3. Scramble the beaten egg in the empty space in the pan until fully cooked.
  4. Add the cooked rice and mixed vegetables, breaking up clumps and combining everything.
  5. Season with soy sauce, salt, and pepper, stirring to mix evenly.
  6. Finish cooking for an additional 3-5 minutes, stirring to prevent sticking.
  7. Garnish with sliced green onions and serve hot.
