Honey Chipotle Chicken Rice Bowls

A delightful mix of sweet honey and spicy chipotle chicken served over rice, topped with fresh avocado corn salsa.

  • 1 lb chicken breast
  • 2 tablespoons honey
  • 2 tablespoons chipotle sauce
  • 2 cups cooked rice
  • 1 avocado, diced
  • 1 cup corn (fresh or frozen)
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Marinate the chicken breast in a mixture of honey and chipotle sauce. Allow it to marinate for at least 30 minutes.
  2. Preheat your grill or grill pan over medium heat.
  3. Season the marinated chicken with salt and pepper. Grill for 6-7 minutes on each side until fully cooked.
  4. Prepare the avocado corn salsa by mixing diced avocado, corn, chopped cilantro, salt, and lime juice in a bowl.
  5. Rest the grilled chicken for a few minutes before slicing.
  6. Assemble the bowls with cooked rice, sliced chicken, and avocado corn salsa on top.
  7. Serve with lime wedges on the side.
