Iced Oatmeal Cookie Bars

Delightful chewy oatmeal cookie bars topped with a sweet glaze, perfect for any occasion.

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 12 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9 inch baking pan with butter or non-stick spray.
  3. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  4. Add in a large egg and 1 teaspoon of vanilla extract; mix until well combined.
  5. Combine in another bowl 1 cup of old-fashioned oats, 1 cup of all-purpose flour, baking soda, cinnamon, and salt; stir until mixed.
  6. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 20-25 minutes, or until golden brown. Check with a toothpick for doneness.
  9. Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  10. Mix together 1 cup of powdered sugar, 1-2 tablespoons of milk, and 1/2 teaspoon of vanilla extract for the glaze.
  11. Drizzle the glaze over the cooled bars.
  12. Cut into squares and enjoy as a delicious snack or dessert!

Notes

Use rolled oats for the best texture. Customize the glaze with spices or add-ins as desired.
