Juicy Cucumber Caprese Salad

A refreshing twist on the traditional Caprese salad with crisp cucumbers, sweet cherry tomatoes, creamy mozzarella, and fragrant basil.

Ingredients

  • 2 large cucumbers
  • 1 pint cherry tomatoes
  • 8 oz fresh mozzarella balls
  • Fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the cucumbers: Slice them into thin rounds and place in a large mixing bowl.
  2. Add cherry tomatoes and cut them in half, then add to the bowl.
  3. Incorporate mozzarella balls and basil leaves, tearing basil if needed.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Season to taste with salt and pepper.
  6. Toss gently to combine.
  7. Serve immediately or chill for 30 minutes before serving.

Notes

Best served fresh and can be stored separately for a longer shelf life.
