Keto Beef Stroganoff

A delicious and satisfying low-carb version of a classic Beef Stroganoff, featuring tender beef, creamy sauce, and earthy mushrooms.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • Cauliflower rice or mashed cauliflower for serving

Instructions

  1. Prepare the skillet: Start by heating a skillet over medium heat. Add the olive oil and let it warm up.
  2. Sauté onions and garlic: Add the chopped onion and minced garlic, cooking until the onion becomes translucent, about 3-4 minutes.
  3. Brown the beef: Add the sliced beef sirloin and cook until browned on all sides, about 5-7 minutes, without overcrowding the skillet.
  4. Add the mushrooms: Stir in the sliced mushrooms and cook for an additional 5 minutes.
  5. Combine with broth and mustard: Pour in the beef broth and add the tablespoon of mustard, bringing the mixture to a simmer.
  6. Incorporate sour cream: Reduce heat to low and mix in the sour cream until well combined.
  7. Season: Season with salt and pepper to taste.
  8. Serve: Serve Keto Beef Stroganoff over cauliflower rice or mashed cauliflower.

Notes

For added flavor, garnish with fresh parsley or chives. Store leftovers in an airtight container for 3-4 days.
