Lemon Bar Cookie Cups

Delightful bite-sized desserts combining tangy lemon curd with sweet sugar cookie cups, perfect for any occasion.

Ingredients

  • 1 cup sugar cookie dough
  • 1 cup homemade lemon curd
  • 1 tablespoon lemon zest
  • 1/2 cup powdered sugar (optional for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Roll 1 cup of sugar cookie dough into small balls, about the size of golf balls.
  3. Place each ball in the wells of a mini muffin tin and press down to form cups.
  4. Bake for 10-12 minutes or until the edges are lightly golden.
  5. Remove from the oven and cool in the tin for about 5 minutes.
  6. Fill each cookie cup with a spoonful of homemade lemon curd.
  7. Garnish with lemon zest and optionally dust with powdered sugar.
  8. Serve and enjoy!

Notes
