Lemon Quinoa & Chickpea Salad

A vibrant and nutritious dish combining protein-rich quinoa and chickpeas with fresh vegetables, perfect for a healthy option.

Ingredients

  • 1 cup quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, diced
  • 1/4 cup parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water using a fine mesh strainer.
  2. Cook the quinoa according to the package instructions, usually simmering for about 15 minutes.
  3. Prepare the vegetables by dicing the cucumber and bell pepper, and chopping the red onion and parsley.
  4. Combine the cooked quinoa, chickpeas, diced cucumber, bell pepper, red onion, and chopped parsley in a large bowl.
  5. Make the dressing by whisking together lemon juice, olive oil, salt, and pepper in a small bowl.
  6. Dress the salad by pouring the lemon dressing over and tossing everything together.
  7. Serve the salad chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator, ideally for up to 3-5 days.
