Lemon Tart

A classic dessert with a bright, tangy flavor and smooth texture, featuring a buttery crust and creamy lemon filling.

  • 1 ½ cups cookie crumbs (for crust)
  • ½ cup butter, melted
  • 1 cup honey (for lemon curd)
  • 4 large eggs
  • ½ cup fresh lemon juice
  • Zest of 2 lemons
  • 1 cup blueberries (for topping)
  • Powdered sugar (for dusting)
  • Meringues (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine cookie crumbs with melted butter in a mixing bowl.
  3. Press the mixture into the bottom and sides of a tart pan.
  4. Bake the crust for about 10 minutes until edges are lightly golden.
  5. Whisk together honey, eggs, lemon juice, and zest in a separate bowl until smooth.
  6. Pour the lemon mixture over the cooled crust.
  7. Bake the tart for 25-30 minutes until filling is set but slightly jiggles.
  8. Cool the tart at room temperature before refrigerating for at least an hour.
  9. Top with fresh blueberries and dust with powdered sugar before serving.

Notes

Serve with whipped cream or additional blueberries for garnish. Best enjoyed chilled or at room temperature.
