Marry Me Chicken Pasta

A delicious and impressive pasta dish combining tender chicken, creamy sauce, sun-dried tomatoes, and spinach, perfect for special occasions.

Ingredients

  • 2 chicken breasts
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 1 cup spinach
  • 1 cup Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper and add to the skillet, cooking for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. Sauté the garlic in the same skillet for about 30 seconds until fragrant.
  4. Add chicken broth to the skillet, bringing it to a simmer to deglaze the pan.
  5. Stir in heavy cream and let it simmer for a couple of minutes until slightly thickened. Add sun-dried tomatoes and spinach, stirring until the spinach wilts.
  6. Combine the cooked chicken and pasta with the sauce, gently tossing everything together. Sprinkle with Parmesan cheese before serving.

Notes

For extra flavor, garnish with additional Parmesan and fresh herbs. Pairs well with a side salad or garlic bread.
