Mediterranean Pasta Salad

A vibrant and flavorful pasta salad featuring fresh vegetables, feta cheese, and olives, perfect for any occasion.

Ingredients

  • 8 ounces pasta (your choice)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions, usually 8-12 minutes. Drain and rinse under cold water.
  2. Combine the cooled pasta with cherry tomatoes, cucumber, red onion, olives, and feta in a large bowl.
  3. Prepare the dressing by whisking together olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the pasta and vegetable mixture, tossing gently to combine.
  5. Serve immediately or chill for 30 minutes for better flavor melding.

Notes

Can be served as a main dish or side. Pairs well with grilled meats or fish. Can be made ahead and stored in the refrigerator for up to three days.
