Mini Strawberry Cheesecake

A delightful dessert that combines a creamy filling with a crunchy crust and fresh strawberries, perfect for parties and celebrations.

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 1 cup fresh strawberries, sliced
  • Optional: powdered sugar for dusting

Instructions

  1. Prepare the Cream Cheese Mixture: In a mixing bowl, combine the softened cream cheese, 1/4 cup of sugar, and 1 tsp of vanilla extract. Mix until smooth and creamy.
  2. Fold in the Whipped Cream: Gently fold in 1 cup of whipped cream into the cream cheese mixture.
  3. Combine the Graham Cracker Crust: In another bowl, mix 1 cup of crushed graham crackers with 1/4 cup of melted butter.
  4. Create the Crust in Liners: Spoon the graham cracker mixture into mini cupcake liners and press down gently.
  5. Fill with Cream Cheese Mixture: Fill the crusts with the cream cheese mixture.
  6. Top with Strawberries: Place sliced strawberries on top of each mini cheesecake.
  7. Chill in the Refrigerator: Let them chill in the refrigerator for at least an hour.
  8. Dust with Powdered Sugar: Before serving, dust with powdered sugar if desired.

Notes

Use room temperature cream cheese for a smoother mixture. Don’t overmix the whipped cream to keep it light and fluffy.
