Mini Turtle Cheesecakes

Delightful mini cheesecakes featuring a rich blend of chocolate, caramel, and pecans, inspired by the famous turtle candy.

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup chocolate chips
  • 1/2 cup caramel sauce
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the muffin tin by greasing it with cooking spray or butter.
  3. Mix together the graham cracker crumbs, sugar, and melted butter until combined.
  4. Press the crust mixture into the bottom of each muffin cup, packing it tightly.
  5. Beat the softened cream cheese until smooth and creamy.
  6. Gradually add powdered sugar and mix, then add vanilla extract and mix well.
  7. Incorporate the eggs one at a time, mixing well after each.
  8. Fold in chocolate chips and chopped pecans gently.
  9. Spoon the cheesecake mixture over the crust in each muffin cup, filling about 3/4 full.
  10. Bake for 20 to 25 minutes until the edges are set but centers are slightly jiggly.
  11. Cool in the muffin tin for 10 minutes, then transfer to a wire rack. Drizzle with caramel sauce and top with pecans before serving.

Notes

Serve in muffin cups or plated for more elegance. Drizzle with extra caramel for added flavor.
