Moist and Fluffy Coffee Cake Muffins with Cinnamon Streusel

  • ½ teaspoon baking powder

  • ½ cup unsalted butter, softened

  • ½ cup sour cream
  • ½ cup brewed coffee (cooled)
  • Cinnamon Streusel Topping:
  • ¼ cup all-purpose flour
  • ¼ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a muffin tin with liners or grease it lightly.
  3. Mix the dry ingredients: combine flour, sugar, baking powder, baking soda, and salt.
  4. Cream the softened unsalted butter until light and fluffy.
  5. Add the eggs and vanilla extract, mixing until smooth.
  6. Incorporate the sour cream and cooled coffee into the butter mixture.
  7. Combine the dry mixture with the wet mixture gently.
  8. Prepare the streusel topping by mixing flour, brown sugar, cinnamon, and melted butter until crumbly.
  9. Fill the muffin cups with batter and sprinkle with streusel topping.
  10. Bake for 18-20 minutes or until a toothpick comes out clean.
  11. Cool in the pan for 5 minutes before transferring to a wire rack.
