Moroccan Chicken & Rice

A delightful dish that combines tender chicken, fluffy basmati rice, and rich North African spices, offering a satisfying and nutritious meal.

  • 2 chicken breasts
  • 1 cup basmati rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 2 cups chicken broth
  • 1 cup chickpeas, drained
  • 1/4 cup raisins
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Prepare the Skillet: Start by heating a large skillet over medium heat. Add a splash of olive oil to the pan.
  2. Sauté Onion and Garlic: Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.
  3. Season the Chicken: Season the chicken breasts generously with salt, pepper, cumin, coriander, paprika, and cinnamon.
  4. Cook the Chicken: Add the seasoned chicken to the skillet and cook for about 5 minutes on each side until browned and cooked through.
  5. Add Rice and Liquids: Once the chicken is cooked, add the basmati rice, chicken broth, chickpeas, and raisins to the skillet. Stir to combine and bring to a boil.
  6. Simmer: Reduce heat to low, cover and let simmer for about 20 minutes.
  7. Finish the Dish: After 20 minutes, check the rice. If absorbed and tender, remove from heat and fluff with a fork.
  8. Garnish and Serve: Sprinkle fresh cilantro on top before serving for added flavor.

Notes

For a vegetarian option, replace chicken with tofu and add more vegetables. Adjust spices to taste for more heat.
