Neapolitan Pasta

A classic Italian dish that brings the vibrant flavors of Naples into your home, featuring delicious pasta intertwined with an aromatic tomato sauce.

  • 8oz (220 grams) spaghetti or bucatini
  • 1 Tbsp olive oil or extra virgin olive oil
  • 1 medium-sized onion, finely chopped
  • 23 garlic cloves, minced
  • 1 can (14oz/400 grams) tomatoes (whole, diced, or cherry tomatoes)
  • ½ tsp fine salt, plus more to taste
  • ⅛ tsp black pepper
  • 1 handful of basil leaves, chopped or torn
  • 3 Tbsp grated parmesan, to serve

Instructions

  1. Cook the Pasta: Start by boiling a large pot of salted water. Once it reaches a rolling boil, add the spaghetti or bucatini. Cook according to package instructions until al dente, about 8-10 minutes.
  2. Prepare the Sauce: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent.
  3. Add Garlic: Add the minced garlic to the onions in the skillet. Cook for an additional minute, stirring constantly until the garlic releases its aroma.
  4. Incorporate Tomatoes: Pour in the canned tomatoes, breaking them up with a spoon if necessary. Add the salt and black pepper. Stir well to combine and allow to simmer for about 10-15 minutes, thickening the sauce.
  5. Add Fresh Basil: Just before serving, stir in the chopped or torn basil leaves. Adjust seasoning if needed.
  6. Combine with Pasta: Once cooked, reserve some pasta water, then drain the rest. Add the drained pasta directly into the skillet with the sauce and toss together.
  7. Serve: Plate the pasta, drizzling with additional olive oil if desired, and top each serving with grated parmesan cheese.

Notes

This dish is best served immediately and can be stored in an airtight container in the refrigerator for up to 2-3 days. Reheat in a skillet over low heat with a splash of water or olive oil.
