One-Pan Chicken Burrito Bowl

  • 2 boneless, skinless chicken breasts
  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 2 cups chicken broth
  • Chopped cilantro and lime wedges for serving

Instructions

  1. In a large skillet, heat some oil over medium heat. Season the chicken breasts with cumin, chili powder, salt, and pepper.
  2. Once the skillet is hot, add the seasoned chicken breasts. Cook them for about 5-7 minutes, browning each side.
  3. After the chicken is browned, remove it from the skillet and set it aside.
  4. In the same skillet, add the rice, black beans, diced bell pepper, and corn. Stir everything together.
  5. Next, pour in the chicken broth and bring the mixture to a simmer.
  6. Return the chicken to the skillet, covering it with the rice and vegetable mixture. Cover the skillet with a lid and cook for about 15-20 minutes.
  7. After the cooking time is up, remove the skillet from the heat and fluff the mixture gently with a fork.
  8. Garnish with chopped cilantro and serve with lime wedges.
