One Pan Creamy Tomato Pasta

A quick and comforting meal of creamy tomato pasta made in one pan, featuring fresh spinach and gooey cheese.

  • 2 Tbsp. extra-virgin olive oil
  • 1 cup diced yellow onion
  • 1 pint cherry tomatoes, halved
  • 8 oz. dry penne pasta
  • 1 cup marinara sauce
  • 2 cups water
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. kosher salt
  • 1/2 tsp. cracked black pepper
  • 2 to 3 generous handfuls fresh baby spinach
  • 1/3 cup heavy cream
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil leaves
  • Grated Parmesan cheese for garnish (optional)

Instructions

  1. Start by heating 2 tablespoons of extra-virgin olive oil in a large skillet that has a fitted lid over medium heat.
  2. Once the oil is hot, add the diced yellow onion and halved cherry tomatoes to the skillet. Cook for about 7 to 8 minutes until onions are soft and tomatoes break down.
  3. Next, add the dry penne pasta, marinara sauce, and 2 cups of water to the skillet, then sprinkle in the garlic powder, dried oregano, kosher salt, and cracked black pepper.
  4. Increase the heat to medium-high until the mixture begins to simmer, then cover the skillet.
  5. Let the pasta cook, stirring occasionally, until it becomes al dente, about 10 to 12 minutes. Add more water if it looks dry.
  6. After the pasta is cooked, remove the lid and stir in the heavy cream, fresh spinach, and mozzarella cheese, stirring for about 2 minutes until spinach wilts and cheese melts.
  7. For an extra touch, garnish with fresh basil and sprinkle grated Parmesan cheese on top, if desired.
