One Pot Garlic Butter Pasta

A simple and flavorful one pot meal combining garlic, butter, and pasta, cooked to perfection in vegetable broth.

  • 8 oz pasta (spaghetti or your choice)
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Sauté the garlic for about 1-2 minutes until fragrant.
  3. Add the pasta and vegetable broth, stirring to combine.
  4. Incorporate the cherry tomatoes into the pot.
  5. Boil the mixture, then reduce heat and simmer uncovered for 10-15 minutes until pasta is al dente.
  6. Finish by stirring in the grated Parmesan cheese, and season with salt and pepper.
  7. Garnish with fresh parsley before serving.

Notes

For a creamy version, stir in heavy cream or cream cheese after cooking.
