Oven Baked Chicken Taquitos

Crispy, baked taquitos filled with shredded chicken and cheese, perfect for a fun meal or snack.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup salsa
  • 1 teaspoon taco seasoning
  • Corn tortillas
  • Olive oil spray
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the shredded chicken, shredded cheese, salsa, taco seasoning, and salt in a large bowl.
  3. Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
  4. Assemble by placing about 2 tablespoons of the filling in the center of each tortilla and rolling them tightly.
  5. Spray the tops of the taquitos with olive oil.
  6. Bake for 15-20 minutes until golden brown and crispy.
  7. Serve hot with salsa or guacamole for dipping.

Notes

For a variety, try adding black beans or corn to the filling.
