Pioneer Woman Stuffed Pepper Casserole

  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 2 cups beef stock
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • 1 cup cooked rice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat until fully cooked, then drain excess fat.
  3. Sauté the chopped bell peppers and onion for about 4-5 minutes until softened.
  4. Add the beef stock and diced tomatoes, seasoning with salt and pepper. Mix in cooked rice if desired.
  5. Transfer the mixture to a greased casserole dish, spreading it evenly, and sprinkle cheese on top if using.
  6. Bake for about 30 minutes or until the cheese is melted and bubbly.
  7. Serve warm, optionally with toppings like sour cream or fresh herbs.
