  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder

  • 1 cup fresh raspberries, chopped
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Add the large egg and vanilla extract, and mix until well combined.
  4. Mix together the all-purpose flour, baking powder, and salt in another bowl.
  5. Combine the dry ingredients with the wet mixture, stirring until just combined.
  6. Fold in the chopped fresh raspberries gently.
  7. Prepare baking sheets with parchment paper.
  8. Shape rounded portions of dough onto the prepared baking sheets.
  9. Bake for 12-15 minutes, until edges are lightly golden.
  10. Cool on baking sheets for a few minutes before transferring to wire racks.
  11. Dust with powdered sugar before serving.

Notes

For best flavor, use fresh raspberries. Adjust baking time according to your oven.
