Red Velvet Lava Cupcakes

Indulgent red velvet cupcakes with a molten chocolate ganache center.

Ingredients

  • 1 box red velvet cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup chocolate ganache (store-bought or homemade)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the cupcake pan by lining it with cupcake liners.
  3. Mix the red velvet cake mix, 3 eggs, 1/2 cup of vegetable oil, and 1 cup of water in a large bowl until just combined.
  4. Fill each cupcake liner halfway with the batter.
  5. Add a spoonful of chocolate ganache in the center of each cupcake liner, then top with more batter.
  6. Bake for 18-20 minutes, until a toothpick comes out clean but the center is gooey.
  7. Cool for a few minutes before transferring to a wire rack and dusting with powdered sugar.

Notes

For extra flair, serve with vanilla ice cream or a drizzle of chocolate sauce.
