Rosemary Garlic Mashed Potatoes

  • 2 pounds potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/4 cup milk
  • 1/4 cup butter
  • 2 tablespoons fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes: Start by peeling and cubing 2 pounds of potatoes. Cut them into similar sizes and place in a large pot, covering with water and adding a pinch of salt.
  2. Cook the Potatoes: Bring water to a boil, then reduce to medium and let cook for 15-20 minutes until tender.
  3. Make the Garlic Butter: In a small saucepan, melt 1/4 cup butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Drain and Return Potatoes: Once tender, drain the potatoes and return to the pot to evaporate excess moisture.
  5. Combine Ingredients: Add garlic butter, 1/4 cup milk, chopped rosemary, and season with salt and pepper.
  6. Mash the Potatoes: Mash to desired creaminess, using a potato masher or electric mixer with care to avoid over-mixing.
  7. Adjust Seasoning: Taste and adjust seasoning with salt and pepper.
  8. Serve Warm: Transfer to a serving dish and enjoy immediately.

Notes

For added flavor, garnish with olive oil or melted butter before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
