Simple Black Bean and Corn Salad

A refreshing salad combining black beans, corn, and fresh vegetables, perfect for summer barbecues or healthy lunches.

  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/2 onion, finely chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Prepare the ingredients: Rinse and drain the black beans, and cook fresh corn if using.
  2. Chop the vegetables: Dice the bell pepper and avocado, and finely chop the onion.
  3. Mix the salad: In a large bowl, combine the black beans, corn, bell pepper, avocado, and onion.
  4. Prepare the dressing: Whisk together lime juice and olive oil, seasoning with salt and pepper.
  5. Combine everything: Pour the dressing over the salad and gently toss to coat.
  6. Serve: Enjoy immediately or chill for about 30 minutes for flavors to meld.

Notes

Add avocado just before serving to prevent browning. Consider garnishing with fresh cilantro or cheese.
