Slow Cooker Queso Dip

A crowd-pleasing, creamy, and cheesy dip featuring ground beef, tomatoes, and spices, perfect for gatherings.

  • 1 pound ground beef
  • 1 can Rotel diced tomatoes and green chilies
  • 16 ounces cream cheese, cubed
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked, breaking it into crumbles.
  2. Transfer the cooked beef to the slow cooker.
  3. Add the can of Rotel tomatoes and green chilies, cubed cream cheese, shredded cheddar cheese, garlic powder, onion powder, and season with salt and pepper.
  4. Stir all the ingredients together until well combined.
  5. Cook on low for 2 to 3 hours, stirring occasionally until melted and smooth.
  6. Serve warm with tortilla chips or other accompaniments.

Notes

For added flavor, brown the meat well and experiment with different cheeses. Keep warm in the slow cooker for gatherings.
