Spinach Chicken Parmesan Meatballs

A delicious and healthy twist on classic meatballs, loaded with fresh spinach and Parmesan cheese.

Ingredients

  • 1 pound ground chicken
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups homemade or store-bought tomato sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the ground chicken, chopped spinach, grated Parmesan cheese, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper in a large bowl until combined.
  3. Shape the mixture into golf ball-sized meatballs and place them in a baking dish.
  4. Add the tomato sauce evenly over the meatballs.
  5. Bake in the preheated oven for 20-25 minutes, or until cooked through and no longer pink in the center.
  6. Serve hot with pasta, on a sub roll, or on their own, optionally sprinkling extra Parmesan cheese on top.

Notes

For a lighter meal, serve on a salad or as an appetizer with dipping sauce.
