Strawberry Cheesecake Stuffed French Toast

A delightful breakfast treat that merges the classic flavors of strawberry cheesecake with the warm comforts of French toast.

  • 1 cup mashed fresh strawberries
  • 1/2 cup white sugar
  • 1 tablespoon cornstarch
  • 1 cup cold water
  • 1/2 cup milk
  • 3 large eggs
  • 1 pinch cinnamon
  • 1 (8 oz) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3/4 cup white sugar
  • 1 loaf French bread
  • 1 teaspoon butter
  • Whipped cream (optional)
  • Powdered sugar (optional)

Instructions

  1. Prepare the Strawberry Sauce: In a medium saucepan, combine the mashed fresh strawberries and 1/2 cup white sugar. Heat this mixture over medium heat. Stir occasionally until the strawberries start releasing their juices.
  2. Thicken the Sauce: In a small bowl, mix the cornstarch with 1 cup of cold water until well blended. Pour this mixture into the saucepan with the strawberries. Cook and stir continuously for about 3-5 minutes or until thickened. Once thickened, lower the heat and let it simmer while you work on the other ingredients.
  3. Prepare the Egg Mixture: In a shallow bowl, whisk together the 3 large eggs, 1/2 cup of milk, and a pinch of cinnamon. Set the bowl aside.
  4. Make the Cheesecake Filling: In another bowl, mix the softened cream cheese with 1 teaspoon of vanilla extract and 3/4 cup of white sugar. Stir everything together until it reaches a smooth consistency.
  5. Prepare the Bread: Take the loaf of French bread and slice it into thick pieces (about 2 inches each). Cut a slit in each slice, making sure to not cut all the way through to create a pocket for the filling.
  6. Stuff the Bread: Use a spatula to fill each pocket in the bread slices with the cream cheese mixture. Make sure to stuff them generously so that each bite is filled with creamy goodness.
  7. Cook the Stuffed French Toast: In a large skillet, melt 1 teaspoon of butter over low-medium heat. Dip each stuffed slice of bread in the egg mixture, ensuring both sides are coated and allowing any excess to drip off. Place the coated bread slices onto the skillet.
  8. Brown the Toast: Cook each slice for about 3 minutes on each side, or until they turn golden brown. This will give you a nice crispy exterior while keeping the inside soft and creamy.
  9. Serve with Strawberry Sauce: Once cooked, remove the stuffed French toast from the skillet. Top each serving with the strawberry sauce and optional whipped cream and powdered sugar if desired.

Notes

Choose fresh strawberries for the best flavor. You can customize the cream cheese filling by adding different flavor extracts.
